I have a treat for you today. A recipe for this very nutritious and delicious dish.
Nope, it’s not pasta. I know it looks like it and that’s what I thought so too at first, but it’s actually something a lot healthier – steamed chicken breast with fresh tomatoes, not sauce that comes from a can, and what looks like parmesan on top is actually almonds. It’s healthier because it doesn’t have the added sugar from canned sauce and it’s cooked with olive oil, the healthy oil. Here’s the recipe:
Ingredients
Chicken breast
Chicken stock
Tomatoes
Garlic
Onion
Olive oil
Pepper
Basil leaves
Ground almondsPreparation
Steam the chicken for 10-15 minutes. Add chicken stock and set aside.
Sauté the garlic, onion, basil leaves, and tomatoes in olive oil until the tomato sauce comes out.
Add pepper and chicken stock.
Pour the sauce on the steamed chicken. Garnish with ground almonds and dried basil leaves.Take a picture.Serve!
Sounds pretty simple, right? You tell me. This recipe was actually given by my colleague Merci. Cooking is not my thing, I’m really lazy in the kitchen and prefer to buy ready-made food or something that needs no cooking, like peanut butter and nutella and cereal sandwiches or mildee salad.
But I have been incredibly lucky because Merci volunteered as tribute to cook healthy lunches for me while I was eating tunapple (tuna + apple) for dinner in the pantry one day. She said she wanted to be a chef and since she couldn’t be one at the moment, she would love practice for the future, maybe? Who knows. So I happily agreed, and she now cooks for around 6 girls in the office. She cooks a huge variety of healthy and pretty dishes, like these:
Basically what I’ve been instagramming for lunch lately because look at how picture-perfect they all look. I mean, how could you not? (Are you on Instagram, by the way? Let’s be friends!)

She actually dances or does some other exercise while cooking. The name of the dish is because she said she was dancing to the song “Sway” while cooking it. Haha. I am really happy to have her as a “personal chef.” Merci, Merci! 😀
